    I have got into light fermentation recently (Jun, water kefir, sauerkraut and beets, mostly) . I love that I can throw the ingredients into a kilner jar and let it do it’s thing so I might grab some dried petals and try making this: I do use a vinegar rinse most times I wash…. I take it that this fermentation is all done with just a cloth cover rather than the jar being closed like it is for the veggie ferments?

    Yes, its done with a cloth cover like you would water kefir

    I read somewhere that you should feed the mother alcohol while it's developing into vinegar. But how does it work when it's already bathing in alcohol, do you have to add more alcohol to the mix?

    Fab. I don’t have rose petals right now but I have really enjoyed adding hibiscus flowers to my water kefir so I seem to have begun a batch of vinegar with that. Now to give it a few weeks to see how it turns out…
