I’ve been eating a variety of beans lately since my naturopath recommended that I aim for 1 cup a day at our last visit. Today will be blackeye peas.
ETA: I make various bean recipes with a pound of beans at a time and eat it for several days. I end up eating more than 1 cup.
It’s also getting us through our 40 day Nativity fast. :laugh:
I mostly forgot to eat today...just a banana.
Lunch will be leftover cassava flour spaghetti noodles with homemade nightshade free spaghetti sauce with a slice of homemade grain free, gluten free, dairy free bread.
The past few days, I’ve been eating salmon soup (with broccoli, cauliflower, butter, cream, and a little bit of carrot), chicken, and homemade low-carb bread with goat cheese.
Pumpkin seeds!! My hairdresser told me they're one of the best things you can eat for hair growth, so I got a big bag.

Oatmeal, yogurt, chicken, brown rice
Yogurt and spinach, not together though XD
Lots of stuff: Greek yogurt with pumpkin seeds, walnuts, blueberries and blackberries, green salad, and calabacitas (squash cooked in tomato sauce with corn and cheese).
