I was crazy busy with work all afternoon, so then I only ate some rye crisp bread and a couple of yoghurts. Just a while ago I had spinach soup and some bread with seeds in it. Now I'm having rosehip tea with honey.

Had maduras and rice earlier today. Cooking a tuna steak with lemon pepper, a potato, and sauteed baby spinach for dinner.
eta ended up just doing tuna and spinach. saving the potato for lunch tomorrow.
I've been continuing with supplementing my diet with protein. I dont know if i'm just hitting a growth spurt but i've had a little less than an inch of growth from December 14th until today which is FAR greater than my average growth. December 14th is around the time I started the protein supplement. I'll keep measuring and updating but I'm excited about this!!
Mash with a typical Belgian dish called "vol-au-vent". It's yummy & my mom's favorite. Since we eat it with mash instead of potatoes, it's become a favorite of mine too.
Scrambled eggs, a handful of cherry tomatoes and bread with cheese. Protein shake. Smoothie made of unsweetened yogurt, kale, chia seeds, frozen blueberries and strawberries (managed to get down half a glass only, put too much kale in it).

Oh no, triple post... Porridge with strawberries. Chili sin carne (milk protein meat substitute, chickpeas, bell pepper, red chili, onion, garlic, tomato sauce) with rice.
Some kind of white fish, mashed potato with herb butter, peas and a banana. Coffee with ashwagandha. Rosehip tea with maca.

I ate some dragonfruit and drank lots of banana juice.
Eggs and avocado mash, mackerel with a green salad and chicken tigh curry. Lots of yummy food with healthy fats.
More chili sin carne, today with bread and cheese. Handful of baby carrots and couple of nuts (brazilian nut, walnuts).
For breakfast I had steel cut oats made with almond milk, banana & strawberries. For lunch I had a whole wheat wrap with hummus, spinach, turkey, avocado, red onion & feta and a handful of raspberries. Dinner I had whole wheat crackers with prosciutto & mozzarella. For a snack I had a smoothie made with vanilla greek yogurt, almond milk, spinach, banana & a handful of mixed berries.

Scrambled eggs. Sweet potato fries with a dip (crème fraîche, ketchup, lemon juice, garlic, honey, salt and pepper). Protein quark and half a bell pepper with bread.
So far today I've had rye toast with vanilla almond butter, strawberries, banana & raspberries on top; a whole wheat wrap with hummus, spinach, turkey, avocado, red onion & feta and carrots and cucumbers on the side; and a bowl of strawberry Greek yogurt with granola & goji berries.
(BTW, I'm underweight & trying to gain for some time now & am seriously struggling, so if anyone has any suggestions, they would be very much appreciated ❤️)
Today I started taking vitamins properly! Prenatal multivitamin, collagen and K2 + D3. It's for my overall health, but one of the main motivators is my hair, of course. :)

Incorporate carbs, such as pasta, and of course lots and lots of protein. Almond butter is a good start. A portion of red meat once a week, like a steak, or tuna, salmon etc will do you some good as well, and try eating eggs every day for breakfast (I'm assuming you're not vegetarian cause I saw turkey but I didn't see much other meat). :)
Try protein shakes and lifting weights, too. I am unable to gain weight without working out - unless I eat pizza and drink beer every day, but that's not the type of weight I try to gain lol.

Can working out actually help you gain weight?! I didn't know that was even a thing. I've been to scared to exercise since I dropped the weight because I didn't want to lose any more. Do you have to do certain exercises to gain rather than lose?
& Same! I know I could make this a lot easier on myself if ate pizza & candy all day, but I'd rather do it a wee bit healthier lol.
Yes, with good diet and protein, weights specifically can help you gain weight in the form of muscle. Not saying you'll become he-man but it's a more healthy weight than just fat, though if you're underweight you probably need a bit of both. So instead of something like long walks/runs, which would most likely make you lose weight or slim down, try low reps with weights, exercises like squats, lunges, pushups etc. It'll also help get up your appetite. :)

A piece of homemade pizza, not sure what was on it but looked like rice at least, and something like oregano on top but I'm not an expert in that area.
Also goji berries and of course my vitamins and a little bit of homemade ginger drink.
Bone broth has been a staple of my diet the past week. Hopefully I'll see some benefits from it.
Avocados, Kale, Chia seeds, coconut water, eggs, bananas, nori seaweed, yogurt, soy milk and a handful of almonds...
Take 1 litre of water or however much drink you want to make. Grind up 200-250 g of ginger root and add it into the water. Heat it up to 60 degrees - don't let it boil. Let it brew for at least 30 minutes. Then, remove it from the stove and strain it. Peel two lemons and take their juices. You can do this however you want, but I like to uninclude as much fruit flesh as possible. Add the juices into the mixture. Then, add half a desilitre of honey - more or less depending on how sweet you want it to be. Mix. You can also add apple juice (preferably as fresh and "good" as possible, the regular store ones generally aren't that great).
It's best consumed warm, but probably shouldn't be heated up anymore once it has cooled, and in small quantities. I take a shot in the morning and in the evening. :)

Vegetarian Fusilli Bolognese, microwaved meal. Avocado on toast. I've noticed I've been cooking a lot less ever since DS moved away. :rolleyes:
