Sulfate Free?

Sorry guys, there probably is a thread out there explaining what this is, but i couldn't find it for the life of me!
So why exactly is a sulfate free shampoo/condition beneficial for hair, and whats your favourite one/brand?

For some people, sulfates are drying. They can affect both the hair and the scalp.

For me, the benefits of going sulfate free are to my scalp and skin. My scalp and the skin on my back, behind, and forearms gets painfully dry and flakey if I use sulfates. Since I started using Chagrin Valley shampoo bars my hair is definitely wavier but I don't know for certain if that is from lack of sulfates or lack of cones.
