How can you tell if your hair has "buildup" from the hair products that you are using?

I can tell it has build up when it starts being overly tangly 'velcro-like' and generally misbehaves...

My hair acts exactly like how HairColoredHair said- "attaches to itself and my clothing like velcro" and "overly tangly 'velcro-like'"

Thank you for the clarification (literal not hair-wise). All this time I had no idea what that phrase was supposed to mean :)

My hair actually changes colur when there is build-up present - it oges from dark red to some kind of dusty purple almost. And it feels icky in way.
