I have finally come up with a scarf bun that I really truly like. It's also a bit of a messy bun, which can be harder to do with long hair, so that's cool too. I have now recreated it three times, so I feel confident saying this actually works and it's not just a fluke.
1 hair-stick. 1 scarf. No pins.
Tie an overhand knot in your hair
Thread a scarf through that knot
Pull the knot tight against your scalp and pin it in place with a hair stick (Be careful not to stab through your scarf during this step)
Of the hair that hangs down, separate it into two sections and hold each one with one end of the scarf
Wrap the two sections around the base of the bun
For me, my hair is shorter than the scarf when done like this, so I can finish wrapping the scarf and tie the ends of the scarf together. (If your hair is knee-length, this might be an issue? Mine is waist-length nearing hip-length right now.) You can wrap up every last bit of scarf, or leave a little bit hanging down.

(I'll try to get a better picture of it.)
