My ends are pretty fragile and dry right now, I do work about 5-6 nights a week and I prefer my hair up as I wear a lab coat and run around everywhere! So I can't even french braid, so I'm looking for simple updos other than a simple bun/pony tail/braid that I can wear to work. (Or anywhere really)

Gibson tuck or a french twist, maybe? Or a french or dutch braid with the ends tucked under? (then you don't have to secure with an elastic)

On days where I don't have the time, energy, or whatever, I do a simple cinnamon bun or a French Twist (sometimes a combination starting with a French Twist, but rather than trying to tuck it all in on the side, you bring the end of the tail up and swirl it around into a wide cinnamon bun on top) with anywhere from 1 to 3 of those Conair Ultimate Updo Clips (http://www.amazon.com/dp/B004OV2EIM). I love these things! I know some people mentioned having seams that had to be filed off, but that is no big deal, and none of the ones I bought had this issue.

I also sometimes do a low Topsy-tail with the tail separated into 3 parts that are each braided and tucked back up underneath (no elastics on the ends, by the way). I also have the issues with the fragile ends and try to protect them as much as possible, while also trying not to get too bored with my hair.

Buns in general? Your options vary depending on your length, but most people can manage cinnabuns, or infinity/figure-8s.
I was originally going to suggest tucked French or Dutch braids, but since you can't do those, a side braided bun could work.
I like to have it to the side so I can see what I'm doing...just do a simple three strand braid, but loop the ends through the hairtie in stead of pulling them all the way through.
Then just roll your braid towards itself starting from the ends, and secure with SpinPins or whatever works best for you when you're finished.
It looks a lot more complex than it is when you're done!

Oh! Also, if you don't French braid, you could also try the Faux French braid: http://www.youtube.com/watch?v=2kOyGD_KOoA. It's really just a plain braid but looks really nice, and someone (I can't remember who) tucked hers with a pretty fork. I don't have a fork like that, so I do it with (again) the Clairol Ultimate Updo Clip (I see you're in Florida; you can get one at most Winn-Dixie stores for about $3-4, and sometimes they have them on sale as buy-one-get-one-free, which is how I ended up with 3 of them).

I make a rope crown braid with thick apl-plus blunt hair -
Start in the middle front, add a soft tiny $store band every other add-on;
tuck ends through bands on the second time around or
where evah.
Tucked ends, future beachy waves.

A plain bun in a snood works well.

OMG. Finally. The nautilus bun has eluded me until now. Thank you melusine963 for the links, I can finally do it! Woooooooooo! And it's definitely not going anywhere, even sans sticks. And today is freshly washed slippery hair day too.... I'm rather excited now. (It's the little things :o )
