I keep mine in the kitchen cabinet and use a spoon. I like it best semi-soft, not brick hard or liquid. Never had it go bad, but a jar seems to last about six months. Coconut oil is my favorite oil for conditioning.

If it was going to be food, I'd keep it refrigerated because I worry about bateria contamination.

I buy my coconut oil by the gallon and have never put it in the refrigerator. I keep it in the bathroom and use it after showering and haven't had a problem with it going bad. It lasts me months and months. It's unrefined, I don't know if that makes a difference.

My jar of Nutiva says to refrigerate after opening. I keep the larger jar in the fridge and put some in a smaller container to keep in bathroom for nightly use.

if you have a super large jar of it then yes it should be refrigerated. You can keep a small jar at room temperature for daily use and scoop out fresh as you need it from the larger jar in the fridge. It will stay fresher longer if refrigerated.
