The only thing my hair seriously detests are those color enhancing shampoos. They make my hair feel gummy. Mousses, gels etc just make it straighter and more limp.

My hair hates CO. It makes my scalp crazy oily and my hair feels like it hasn't been washed in weeks. It also hates brushes, I think. And I'm pretty sure my hair hates protein.

Ugh, my hair hates whatever the silk protein extract was in one of my VO5 conditioners!
Aloe gel causes tangles if I leave it in.
Fenugreek was a nightmare for tangles. My hair felt sticky and coated.
Neither my hair nor scalp are particularly fond of henna either -- I find it quite drying (even made with water and conditioner, no acid), and while my hair is thicker and shinier afterward, it takes several days to recover, and close to a week for all the itchy dry skin bumps to disappear. (No, I don't think I'm allergic -- I get the same reaction whenever my skin dries out.)
