Hi dreamkitty. I found this, very first time I used EVOO too. Don't know if it's the same in your case, but in mine, I used the tail end of some very old Extra Virgin Olive Oil we'd used for cooking, and it was - alas - on its last legs. My hair was sticky and it was horrid to wash out. I decided to try again, and this time bought fresh - the result was, for me, fantastic, and not sticky at all, so maybe check the date on your oil.
There isn't any difference between cooking and non olive oil, it's the same thing. Just make sure it hasn't been chillin in the pantry for several years- it's not good for cooking after that either.
This is very good to know actually .......because someone mentioned olive oil to me recently in regards to hair. And I have been wondering about it ever since. Still dont know what exactly to use though if im gonna try it ........

I use all sorts of cooking oils on my hair such as avocado, coconut, mustard..etc.
Yo, Darkmartian, add a couple of drops of Olive oil into your palms and rub them together...gently run your hands down your hair (I like to section my hair because it's thick). When your hands don't feel oily, add a few more drops and continue to run your hands down your hair. The hair doesn't have to feel mega oily/saturated. Leave on over night if possible. When it comes to time wash it out, rinse hair with warm water and massage cone free conditioner in and let it soak under a shower cap for at least 15 minutes. When it comes time to wash that out, massage a little more and rinse out well. You can follow this with your normal shampoo and condition.

I have tried olive oil a couple of times, which is OK for me. But my hair loooooves coconut oil and jojoba, and it hates almond oil. I also have some argan oil, and my hair likes that one too, though I mostly use coconut.
My hair is quite greedy when presented with an oil it likes - especially the ends. I often put a generous amount on my hair before washing, and while it is still damp oil it again, but more lightly. I will add more between washes, especially to the ends, when I feel it is necessary.:)
I suggest that you experiment and find out which oils your hair likes - and which it hates.
