I know you aren't supposed to wash with shampoo for 3 days or so but is it ok to do CO?

Not sure what you mean with 'not supposed to'...?
I have fine hair that is wavy (so drier...) and thick at the roots and thin at the ends. I wash every 3-4 days (this is more often than I used to) but I alternate WO washing with CWC or Co washing with CWC. However, when I swim (I have been ill for two weeks so have not been swimming) I wash CWC with sulfates and often with 'cones every Tuesday and Friday. that's every 3 days. :)
Many of the tips here at LHC are about finding what works for YOU. If your hair is damaged and you have always washed too much, and your hair is constantly dry, then it makes sense to stretch your washes, i.e., to wash less often (this includes WO and CO, IMO). But if you have scalp problems or greasy hair, for example, it is worth it to wash more often but wash CORRECTLY so you do not strip your hair.
Much conventional hair wisdom ('lather, rinse, repeat') is actually quite drying to the hair. So when many people first come here, they find that stretching their washes makes their hair healthier because it is less drying. For me this was the case, but you may have a different experience.

I used conditioner to help get the henna out and then the next day I did CO......I didn't use shampoo for a couple of days after......

I CO-wash daily after henna (I CO-wash daily under normal circumstances too).
Henna is *permanent* so I imagine that even shampoo is fine the day after.... if shampoo could strip henna, it seems like more people would be using it and fewer people would be complaining about henna mistakes they've made and had to live with.

I've shampooed straight after a henna without any fading..the lawsone bonds with the keratins in the hair.

Hmm. I got it from henna hut and it says not to use any shampoo or soap for 3 days afterward? I really want to though. My hair feels weird.

Then go ahead and CO-wash, if you're concerned about shampoo. I can't see anything wrong with either one, IMO.

I am from se michigan also! I just did a hennindigo root touch-up and henna gloss on my ends last night- followed by a mermaid rinse to help rinse out the henna. Then, I shampooed twice with Suave clarifying shampoo followed by Aubrey Organics Camellia Conditioner. This routine has worked pretty well for me the last couple of times I've hennaed. I've been using henna for well over a year now and it still takes about three washings to fully get it out of my hair/scalp. The clarifying shampoo I use doesn't affect the color one bit, but then I'm using Celebration from Mehandi, and it's got a really high dye content. Nice meeting you! :)

The reason that they tell you not to wash directly after henna is because shampoo *can* prevent full oxidation. Oxidation is what turns the henna from orange to red. Plus I find the henna "clings" more to my hair when using shampoo; the conditioner seems to get it out more easily.

Well it was driving me nuts and I had to. Hair feels SO much better now. Almost felt like all the henna didn't come out until now? idk. But it is still wet. Doesn't look any different but I will know more when it drys.
